Wild Chickweed Foraging and Yummy Raw Dip

Here is a fun video I recorded of my chickweed foraging adventure:) I also included a yummy raw recipe for you. The awesome thing about chickweed is it can survive cold weather, making it an excellent herb to consume in the winter!
Benefits of Chickweed:
- Like most wild food it is super high in vitamins and minerals (Iron, Copper, Manganese, Magnesium, Zinc, Potassium, Vitamin C and A)
- Helps maintain healthy weight (contains saponins, which may help to bind fats and remove them from the body)
- Nourishing for the lungs
- Great for drawing out infections and soothing pain (excellent herb to add in your homemade salves and oil infusions)
- Great remedy for eye problems (sties, conjunctivitis, pink eye, etc.)

One of my passions in life is wild foraging and eating an amazing variety of healthy and tasty food. I love how much I have learned from my time in nature, eating her food and seeing her beauty. If you are like me, you realize how much nature can teach you about life and abundance. I often times find an abundance of FREE food all around me, such as these tasty persimmons…
Just like in the video above, there truly is a plethora of abundance and happy surprises all around us. First it takes knowing what you desire, and then it takes believing you can have it. Those persimmon trees were there for years before I “discovered” them. I didn’t “find” them until after I became excited about foraging my food! And just like the wild reishi “magically” showing up (for those of you who are unfamiliar with reishi, it is a Chinese medicinal mushroom tonic with very nourishing, strengthening and healing properties… It was consumed by emperors and noblemen for centuries), when we have fun and go for what we want, good things will follow:)

RAW Maca Thai Dressing with Kelp Noodles

These are probably the most nutritious Thai Noodles you will ever put into your body:)
Kelp noodles are made from the clear substance you can find in between a piece of kelp when you peel it apart. I discovered this one evening while taking a luscious seaweed bath. So they are actually raw (I had my doubts at first too). Kelp noodles make it super easy for me to get my weekly seaweed nutrition (I like to consume seaweed about 3 times per week). The dressing is both creamy and spicy. It tastes even better if you leave it in the fridge for several hours and let the flavors meld. If you end up trying this recipe please let me know what you think!
KELP SEAWEED BENEFITS:
- Excellent source of minerals! Especially rich in potassium, iron, iodine, vitamin B6, riboflavin, and fiber.

Goji Lemonade – Electrolyte Elixir

Check out this amazing drink inspired by my good friend Brian Smith. Goji Lemonade is a huge staple for me. It is so smooth and refreshing! In addition it has super nutrition with high amounts of electrolytes and minerals! Who could ask for more . . .
Lemons assist our body in optimal hydration. The juice of lemons can lower the surface tension in water and therefor allow our cells to absorb more liquid. This is why cultures all over the world have intuitively added a squeeze of lemon or lime juice to their water or other drinks.
The high amounts of potassium found in lemons together with sodium works for the nervous system in transmitting messages as well as regulating the construction of muscles. By drinking Goji Lemonade you get hydrated, you get your electrolytes, and you get a smile on your face:)

Lemonade Fast Day 14

Today is day 14 of my Master Cleanse. I feel it is now time for me to transition back to my regular raw food diet. I am very grateful for this time of cleansing and inspiration. I have become quite addicted to my lemonade:) Today I received a wonderful facial and just allowed myself to relax and meditate, do yoga, listen to my Daniel Vitalis class, and read. I am looking forward to my fun weekend with Bryan and friends!!
Lemonade Fast Day 12

Today is day 12 of my Master Cleanse. I did another salt brine this morning. I feel very clean, clear, and alert!! I feel a deep sense of inner peace and relaxation . . . as if everything is perfect just as it is right now and I am on my perfect path:) Only good is coming my way. Tonight I listened to Day 2 of my Invincible Health Mastery class with Daniel Vitalis. I learned some very interesting information. We are covering all the alchemical elements . . . Earth, Water, Air, Fire . . . and how they apply to our health and well-being. I feel so much joy in my heart right now. No particular reason, just joy of being alive in our beautiful world! I also went to “Shakespeare in the Park” and watched Taming of the Shrew tonight. I have a few mixed feeling about this play. It seems as if the men had a bit of an ego-trip going on:)
Tennessee adventures and Lemonade Fast Day 10

Today is day 10 of my Master Cleanse and I have been playing in and exploring Tennessee… We went into a huge underground cave and took a glass bottom boat ride on the largest underground lake in the USA! Then we went on a beautiful scenic drive, played in the Tellico river, and took a hike near the majestic Bald River waterfall! I had my big glass of lemonade with me and several people asked me if it was moonshine:). I went to Applebees with my family and took my jug of lemonade in with me . . . I think it’s a little amusing to my family, and the waiters, when I take my own food into a restaurant:) (as an interesting side note, my sister told me my body odor smells like food. I have been told this before and have noticed it myself. Has any other raw foodist experienced this chemical change in their body?)
I feel so grateful for today! It was a refreshing time to reconnect with nature and renew my enthusiasm for life! Tomorrow I have a beautiful drive back to Dallas.
